The restaurant will be located in Westwind Plaza on County Road 101 and Highway 7 in the former Bruegger's Bagels.
If all goes as planned, the Chipotle Mexican Grill in the works in Minnetonka's Westwind Plaza will open on June 11. Chipotle will occupy the former Caribou Coffee and Bruegger’s Bagels spaces in Westwind Plaza (4717 County Rd 101). Renovations to the building include a complete remodeling of the interior into a single tenant space and updated exterior. The Minnetonka City Council opened a public hearing on Monday, April 15 for on-sale wine and on-sale 3.2 percent malt beverage liquor licenses for the restaurant. A new restaurant in Minnetonka's Glen Lake neighborhood is in the planning stages. Glen Lake Cafe will be located in Glen Lake Center at 14725 Excelsior Boulevard. The space has in the past been used as a pastry shop and a coffee shop. The owner of Glen Lake Cafe is Thomas Peterson, who currently owns the 318 Café, located in Excelsior. The proposal submitted to the city of Minnetonka includes seating for approximately 55 people in the 2,000 square foot space. The menu would consist of breakfast, lunch and dinner items, along with coffee and baked goods. In addition to the menu, Peterson is proposing to sell wine and beer. Hurricane Grill & Wings in Minnetonka will open their doors for business on Monday, March 4. Then on Thursday, March 7, Hurricane will host a grand opening party with a steel drum band, Vikings cheerleaders and the Vikings mascot, with a few other surprises. Drink specials are from 6-9 p.m. The first Hurricane in the state opened in October in Burnsville. The Minnetonka location will be the chain's 50th store. It's March 1 and the "Big Day" for the anticipated Minnetonka recreation center.
The Big Thrill Factory, a new recreation center in the former Kmart building on Highway 7 and County Road 101 in Minnetonka, is now open. Activities at the center include bowling, Bump-N-Spin cars, laser tag, an arcade with prizes, a black light rope course and a "Fun Factory" playground designed for kids. In addition to the attractions, a café serving food and beverages is available anytime or for a catered birthday party or event. A private event center can be booked for corporate events. The merger is expected to close by the end of the calendar year 2013, OfficeMax CEO and President Ravi Saligram wrote in an email to MaxPerks members. Until then, OfficeMax and Office Depot will remain separate companies.
Office Depot will buy OfficeMax in a deal announced today. The two office supply giants announced the signing of a “definitive merger” today intended to “create a stronger, more efficient global provider better able to compete in the rapidly changing office solutions industry.” Office Depot has a store in Minnetonka, located at 1005 Plymouth Road. There is currently no OfficeMax in Minnetonka, but there are stores nearby in Eden Prairie, St. Louis Park and Chanhassen. The design of a new 9,000-square-foot building for luxury vehicles could be in the hands of Golden Valley-based Steven Fichtel Architects, according to a recent article in the Minneapolis-St. Paul Business Journal. Morrie’s Automotive Group is planning on building the dealership “its Bentley and Maserati ultra-luxury franchises” reported the business Minneapolis-St. Paul Business Journal, on a frontage road near Interstate 394 in Minnetonka. It was reported the request to build is scheduled to come before the Minnetonka Planning Commission Jan. 17 and possibly to the Minnetonka City Council Jan. 28.

The city council will host a public hearing on the subject tonight. The planning commission recommends that the council approve a conditional use permit for a restaurant and variances with outdoor seating area, an interim use permit for outdoor entertainment and a site and building plan review. Minnetonka staff said because this is a new business type to both Minnetonka and the metro area, there are some "unknowns" that may prove to be good or bad. The coffee shop makes a move across County Road 101 on Thursday night to gain a drive thru.
Caribou Coffee, near the intersection of Highway 7 and County Road 101 in Westwind Plaza, will move across the street Thursday night. The coffee shop, which gains a drive thru, completes the four-tenant building that used to be Blockbuster. Caribou joins Massage Envy, T-Mobile and Pro-Cuts. The old Caribou closes Thursday night, and staff will pack up all their coffee materials and move across County Road 101 to open at 5:30 a.m. on Friday, Sept. 28. Bruegger's Bagels, located adjacent to the old Caribou in Westwind Plaza, closed on Wednesday and will be homeless for a couple of months.
