If all goes as planned, the Chipotle Mexican Grill in the works in Minnetonka's Westwind Plaza will open on June 11. Chipotle will occupy the former Caribou Coffee and Bruegger’s Bagels spaces in Westwind Plaza (4717 County Rd 101). Renovations to the building include a complete remodeling of the interior into a single tenant space and updated exterior. The Minnetonka City Council opened a public hearing on Monday, April 15 for on-sale wine and on-sale 3.2 percent malt beverage liquor licenses for the restaurant. Last February, a group of about 600 began a petition on Facebook asking for Chipotle Mexican Grill to locate near the intersection of Highway 7 and County Road 101. They are about to get their wish. Chipotle will occupy the former Caribou Coffee and Bruegger’s Bagels spaces in Westwind Plaza (4717 County Rd 101). Renovations to the building will include a complete rewmodeling of the interior into a single tenant space and updated exterior. An outdoor patio dining area has been proposed to the city of Minnetonka. The patio would be located on the south side of the space on a wide section of existing sidewalk, fully enclosed by a permanent railing.
