November 8th is National Cook Something Bold Day. Bold food doesn’t need to be outrageous or even complex. One simple ingredient can turn your dish from bland to bold. Lemon juice brightens chili, soups, and marinades, and can even stand on its own (almost) when cooking fish.

 

Lemon juice adds both acid and sugar to chili, and sharpens the flavor in a pleasant way. You won’t even taste the juice from one lemon in a big pot of chili, but you’ll notice a little something extra.

 

Try it in a chicken marinade along with honey, tamari, and a whole head of smashed garlic cloves. Let the meat soak for several hours, or even overnight, and grill it for fabulous flavor.

 

My favorite way to prepare a salmon filet is to season it with salt and pepper, brush it liberally with freshly squeezed lemon juice, and cover the top completely with chopped, fresh dill. Grill the fish on a cedar or maple plank for a rich result. A side of this method is its low calorie count.

Other ways to bring boldness to your food include using red pepper powder or red curry paste for a little kick, adding garlic to almost anything, and using bright colors. It’s especially easy to add color to Vegetable dishes. Use purple instead of white onions. Use red, yellow, and orange bell peppers instead of just green ones. Look for more exotic foods such as kumatoes, which are a brownish-colored tomato varietal, and rainbow carrots as pictured above.
