Do you have those delicious green bean casseroles down pat? And you like it that way, right? You've done it for years.
Perhaps you will have younger people over or are taking your dish out as a surprise. Consider uncovering those green beans or the carrots and broccoli and serving them with a quick sauce made in ten minutes while the Steam-in-Bag green beans, peas, or mix are being microwaved. Meet the Savory Braised Green Beans: From Promise
Serves 2-4 Utensils Needed: cutting board, paring knife, garlic press ~ if desired, freshly rinsed and dried green beans, tongs, frying pan, serving platter and fork or tongs
1 half pound to one pound green beans, rinsed and trimmed
1 TBSP spread
1 small onion, finely chopped
1 cove garlic, finely chopped
1/2 cup fat-free reduced sodium chicken broth (if available) or vegetable broth
1-3 tsp lemon juice (3 tsp=3TBSP)
Note: heat Steam-in-Bag as directed while making the 10 minute sauce or incorporate vegetables in as directed below.
Directions:
1. Over medium-high heat, melt spread in skillet; heat chopped onion until tender and somewhat clear, stirring gently about 3-4 minutes,
2. Then add garlic (same method) for about 30 seconds to a minute.
3. Add green beans and stir occasionally for a minute or go onto step 4.
4. Now add broth and bring to a boil over high heat; reduce heat and simmmer about 5 minutes until beans are crisp-tender to taste. Add lemon juice to taste and serve.
Like Herbs? Try: Dill, oregano, or nothing at all
Like Other Veggies? Try: wax beans, carrots, yellow Squash cubes or slices, peas with lemon thyme, peapods colored bell peppers ~ either one will take 1 minute or less, butternut squash, mushrooms, zucchini, eggplant.
